Chicken and Pineapple Skewers, Mojito Flavor

For 4 people. Preparation time: 20 minutes, marinating time: 1 hour, cooking time: 10 minutes.

Peel the pineapple and cut it into large cubes, reserving the juices that flow. Cut the chicken breasts into cubes of the same size, and drizzle them with the pineapple juice, soy sauce, Armagnac, oil, and the juice of half a lemon. Season lightly with salt and pepper. Mix well and let marinate for 1 hour. Drain the meat and fruit, then alternate them on 8 skewers. Sauté the skewers for 7-8 minutes, turning them frequently. Set them aside. Bring the marinade in the pan to a boil and allow it to reduce. Drizzle over the skewers. Serve the skewers garnished with fresh mint and grated zest, alongside a sweet potato purée.
