When Flavors Meet and Elevate Each Other

Our Armagnacs are not only perfect for enhancing recipes, but also for accompanying a wide range of dishes. Their remarkable diversity — from young blends to exceptional vintages — gives them the versatility to pair with an infinite variety of flavors. Armagnac can even accompany an entire meal in perfect harmony.

Concerned about overindulgence? Simply adjust the suggested quantities and keep a glass of water by your side. As a guide, 30 cl (about three glasses) of wine at 12% ABV equals 9 cl of Armagnac at 40% ABV, or three 3-cl servings, ideally enjoyed in a tulip or balloon glass. (Source: BNIA)

During the Meal

Blanche Armagnac can be served as a trou gascon — a refreshing break between courses — with lime sorbet (a personal favorite) or prune ice cream topped with a splash of Blanche Armagnac, or simply well-chilled in a small glass.

Our 100% Baco Blanche pairs beautifully with smoked salmon or trout, caviar, foie gras, charcuterie, or even lemon tart. One Michelin-starred restaurant once served scrambled eggs with Aquitaine caviar accompanied by a chilled glass of Château Garreau Blanche Armagnac. A true delight.

Younger Armagnacs, such as our VSOP, are ideal for flambéing seafood, meats, or pastries, and can also enrich sauces. A dash of Armagnac can even replace vinegar in a vinaigrette for a refined touch.

Try pairing Armagnac with blue cheeses such as Fourme or Roquefort — an exquisite match. For an indulgent twist, drizzle a few drops of Armagnac directly over the cheese and mash gently with a fork before tasting.

Older Armagnacs pair wonderfully with dishes such as guinea fowl with fruit, duck breast with honey, or a cep mushroom omelette.

For dessert, sugar softens the liveliness of a young Armagnac: try it with tarte Tatin, pear charlotte, or candied oranges.

Armagnac and chocolate are a match made in heaven. Enjoy it with a Black Forest cake, chocolate mousse, or simply a square of dark chocolate and a small sip of Armagnac. There are as many possible pairings as there are Armagnacs and chocolates.

With Coffee

The pairing highlights the aromas developed during Armagnac’s aging — wood, roasted notes, smoke, coffee, and cocoa — which perfectly complement coffee’s own character. A mature Armagnac with subtle woody notes will enhance the refinement of a Kenyan coffee, while a younger, more spirited Armagnac will balance the intensity of an Ethiopian roast. The coffee’s bitterness smooths the spirit’s acidity and accentuates its roundness.

You can also serve a “Café Gascon”: coffee with 2 to 3 cl of Armagnac served on the side for tasting.

Let’s not forget Armagnac’s digestive virtues — 2 to 3 cl at the end of a meal is the perfect conclusion.
