Gravlax Salmon with White Armagnac, Lemon, and Mint

For 8 people. Preparation time: 20 minutes, Resting time: 24 hours.

Grate the zest of the lime and mix it in a dish with the coarse salt, sugar, and finely crushed pink berries. Add the lime juice, Blanche Armagnac, and rinsed and chopped mint leaves. Roll the salmon in this mixture on both sides. Wrap tightly in film. Refrigerate for 12 to 24 hours. Carefully pat the salmon dry and slice it into thin pieces. Serve with warm blinis.

  • 3 tablespoons of sugar

  • 3 tablespoons of coarse salt
